Hypothesis is the first of its kind. Roots Run Deep Winery, the team behind Educated Guess, produces Hypothesis, an ultra-premium Cabernet Sauvignon made with 100% Napa Valley fruit made from a new winemaking technique called "flash détente" (translation: instant relaxation).
Winemaker Barry Gnekow, known for his work with Klinker Brick, 7 Deadly Zins, Hahn and Educated Guess, made Hypothesis with flash détente to create a wine with increased color and flavor extraction. Developed in France, flash extraction has been used in Europe, South America and Australia for more than a decade, but in California only since 2009. To provide a qualitative model comparison, Châ
teau de Beaucastel in the Rhô
ne uses this organic pre-fermentation process involving quickly heating and cooling the skins of the fruit before beginning fermentation.
One hundred percent of the fruit goes through flash détente, is then barrel fermented and then spends 12 months in French Oak barrels to create a wine that has incredible structure, depth of fruit and amazing oak integration. For more information on Hypothesis, please visit The Mark Wine TV
